Jason's Steamed Clams

Clams
Serves 4 people
5 lbs of Manilla clams
2 Tablespoons minced garlic
3 Tablespoons butter
3 Tablespoons olive oil
1/4 cup 1 lemon
1 cup white wine
1 Tablespoon fresh parsley
2 diced tomatoes
1 Tablespoon ground pepper
1 Tablespoon red pepper flakes (to taste)
1 Tablespoon Italian dry seasoning (e.g., basil, oregano, thyme, etc.)
Put all ingredients in large pot and cook on high heat with lid on (so the clams steam) for about 5 minutes. Take lid off and continue to boil (so wine cooks off). When clams open, they're done!
