Kathi's Marinade for Vegetables and Chicken

Marinade:
1/2 Cup Olive Oil
1 Tablespoon Cumin
1 Tablespoon Chili Powder
1 Tablespoon Oregano
1 teaspoon Salt
4 Garlic Cloves - minced

put everything in a bowl and mix it up.


Vegetables:
1 1/2 pounds large bite sized mushrooms (there are never enough so get more if you want)
1 small yellow onion - chopped
4 green onions - chopped
1 bell pepper - chopped

Directions:

I put the veggies in a large ziplock or a big bowl and mix in the marinade for at least 1/2 hour before cooking. I always BBQ these because it's messy. I use a veggie cooker for the BBQ with little holes so none of the vegetables fall through the cracks.

If you're going to marinade chicken, set some asside before you taint it with raw chicken. You'll want to put some on your chicken after it's cooked.
