Cheri's Mom's Chimichangas
My mothers best dish was many. But one of
my favorites is Chimichunga's. And very simple.
Use top round or sirloin
1 can of beef gravy
1 can of enchilada sauce
Grated cheese
Flour tortillas
Refried beans (optional)
Avocado (optional)
Onions (optional)
Put meat and both cans in large pot (do not brown meat first). Heat to a simmer,
cover and let simmer for 3 hours.
Remove meat from sauce temporarily and flake with fork (it will fall apart
easy). Place some of this shredded beef on a flour tortilla, you may add heated
refried beans too or just go strictly with the beef. Roll up, fry in hot oil,
drain on paper toweling.
Place burrito on plate and sprinkle generously with cheese and onions. Drench
sauce over top (lots of it) and serve with avocado slices.
You are going to be SO amazed at this RICH sauce, its the most heavenly thing on
earth. You'll love it so much, that the next time you make this, I guarantee
you'll be doubling this recipe!
